Known for his focus on local producers and sustainable agriculture, chef Michael Paley has helped rejuvenate downtown Louisville’s restaurant scene at Proof on Main, housed in the 21C Museum Hotel. This dinner pairs Paley’s rustic cuisine with earthy, bright Spanish wines.
