Bacon-Wrapped Dates

Not only are these dates wrapped in bacon, they are also stuffed with a spicy sausage filling. If you can’t find linguiça, a Portuguese sausage, substitute Spanish chorizo.

Ingredients

  • 3 tablespoons cream cheese at room temperature
  • 3 tablespoons grated Manchego
  • 2 tablespoons diced linguiça
  • 6 dates
  • 3 slices of bacon, cut in half

Method

Preheat broiler. Combine the cream cheese, Manchego, and linguiça in a small bowl and mix well. Make a deep slit in each date and place a half tablespoon of filling inside each one. Close dates and wrap tightly in a slice of bacon. Place the dates in a foil-lined cake pan and roast in the broiler until the bacon is crisp, about 7 minutes. Remove and let cool for 20 minutes.

When the dates are cool enough to handle, skewer on toothpicks and serve.
