Cognac and Coffee Ice Cream

Method

"I love real old-fashioned ice cream turned in a freezer. (You can get a freezer attachment for your Kitchen Aid that will save a lot of muscle!). This is a favorite."

–James Beard

  • 1 quart heavy cream
  • 1 cup light cream
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 cup Cognac
  • 2 tablespoons instant coffee, or to taste

Combine ingredients and stir. Add a dash of salt, place in refrigerator, and chill well. Freeze in an ice cream maker, following manufacturer's directions. If using a hand-turned ice cream maker, freeze in a freezer packed with salt and ice. Turn until it will turn no more. Wipe the cover carefully, remove the dasher, and repack with ice and salt until ready to use.
