A quintessential thirst-quencher, this summery drink originated in England and gets its stateside roots from New Orleans. This variation, from Swanson's 2016 Beard Award–winning cookbook Near & Far, calls for muddled cucumbers and coriander seeds, a heavy dose of the gin-based Pimm’s, freshly squeezed lemon juice, and spicy ginger beer.
