Start off with a dry shake (which you perfected last Happy Hour) of two ounces of Beefeater, an egg white, and equal parts lemon juice and simple syrup. As the authors explain, shaking the egg white breaks up its tightly packed proteins and allows them to trap air bubbles and aerate the finished product.
