You Need to Make This Sweet Potato Cake

It seems we only associate sweet potatoes with dessert when Thanksgiving rolls around, but these orange tubers offer plenty of sugary potential outside of the pie shell. Take this recipe from Women's Entrepreneurial Leadership fellow and Boot Camp alum Tanya Holland, where the starchy root is transformed into a tender, spice-packed bundt cake worthy of an after-dinner indulgence at any time of year.
Holland boils the sweet potatoes until softened, then beats them with eggs and butter. Next, she folds in go the dry ingredients (including a medley of warming spices), and for the final touch, a generous portion of chocolate chips. The batter is then poured into a bundt pan and baked until golden brown. Make it this weekend, and serve yourself a slice, no turkey or stuffing required. Get the recipe.
