Ingredients
Tonka-Kola Syrup
- 75 grams water
- 75 grams demerara sugar
- 6 grams coarsely crushed tonka beans
- 5 grams coarsely crushed kola nuts
Scotch Old Fashioned Batch
- 201 grams Chivas Regal 18 Year Blended Scotch Whisky
- 50 grams water
- 17 grams tonka-kola syrup
- 3 grams Angostura aromatic bitters
To Assemble
- 2 ounces (60 ml) scotch old fashioned batch
- 1 orange peel, removed with peeler
Method
Make the Tonka-Kola syrup: combine all the ingredients in small saucepan and bring to simmer over medium heat, whisking to dissolve the sugar. Remove from heat, cover, and allow to steep for 1 hour. Strain [the mixture] through a fine-mesh sieve. Transfer to a glass bottle. Reserve in the refrigerator.
Make the scotch old fashioned batch: combine all the ingredients in medium bowl, stirring to mix thoroughly. Strain [the mixture] into a glass bottle. Transfer to the freezer to chill thoroughly.
To assemble: Place a small hand-chipped chunk of ice into a small glass. Pour the scotch old-fashioned portion over ice. Express (pinch) the orange peel over drink. Discard the peel.
