The United States spends more than $218 billion each year growing, processing, transporting, and disposing of food that is never eaten, and almost half of the food produced in the U.S. ends up in the garbage and in landfills (read the 2016 ReFED report on food waste for more information). "We're all participants in the food-waste issue," says chef, author, and two-time JBF Boot Camp alum Steven Satterfield. "You're either part of the problem or part of the solution."
