Bacon-Wrapped Asparagus

Ingredients
- 2 bunches asparagus, fibrous ends cut or broken off
- 2 pounds bacon
- Olive oil
- Kosher salt and freshly ground black pepper, to taste
- Truffle oil or lemon oil
Method
Preheat the oven to 350ºF. Lay the bacon slices on a sheet pan, and par-cook the bacon in the oven until beginning to brown, about 10 minutes. Remove from the oven.
Heat the grill to medium-high heat. When cool enough to handle, wrap a piece of bacon around each spear of asparagus and close with a wooden skewer. Repeat the process, putting 5 to 7 spears of asparagus on each skewer. Drizzle the asparagus with a little olive oil and season with salt and pepper. Grill a few minutes on each side, about 3 to 5 minutes total, until asparagus is cooked through. To serve, remove from skewer and drizzle with truffle or lemon oil.
