Gin Mare

Method

A delicious combination of gin, fresh citrus juices, manzanilla sherry, and celery bitters—which provide a subtle savory undertone—this elegant cocktail is bound to be a smash hit at your next cocktail party.

  • 1 ½ ounces gin mare
  • 1 ounce fresh lime juice
  • ¾ ounce fresh grapefruit juice
  • ¾ ounce manzanilla sherry syrup
  • 1 pinch salt
  • 2 dashes orange bitters
  • 2 dashes celery bitters
  • Seltzer
  • Grapefruit slice and sprig of parsley, for garnish

Make the manzanilla syrup: combine equal parts manzanilla sherry and sugar. Bring to a boil and simmer for 30 minutes. Let cool. (Note: use inexpensive manzanilla sherry, if you can find it.)

In a cocktail shaker filled with ice, combine the gin, lime juice, grapefruit juice, manzanilla syrup, salt, and bitters. Shake well to combine and strain into a highball glass filled with ice. Top with seltzer and garnish with the grapefruit slice and parsley.
