“This drink is a riff on another cocktail called the Sweet Olive, which hails from the beloved Brooklyn restaurant Franny’s. Keneniah Bystrom created the Safe Passage to guide his restaurant through a party in honor of Franny’s recently released cookbook. Swapping the Sweet Olive’s Meletti Amaro for Amaro Nardini—which is infused with bitter gentian and fresh peppermint—Bystrom created a softly bitter spritz whose salty complexity matches the sweet citrus of Aperol and the bitter twinge of Nardini.” — Talia Baiocchi and Leslie Pariseau
Ingredients
- 1 ounce Amaro Nardini
- 1/4 ounce Aperol
- 1/4 ounce fresh lemon juice
- 1/4 ounce Castelvetrano olive brine
- 2 1/2 ounces prosecco
Method
Add the Amaro Nardini, Aperol, lemon juice, and olive brine to a cocktail shaker. Add ice and shake until chilled. Strain into a chilled coup or cocktail glass. Top with prosecco and garnish with olives.
